Well, we don't know how things stand from Giles's perspective. He might simply be enjoying a harmless flirtation. Because the stuff that Buffy doesn't like about Margot, would likely get on Giles's nerves too after a while. Whatever is going on, if anything is going on, is still in it's early stages. But I think Buffy is worse-case-scenario-ing it as a means of emotionally protecting herself. She's not going to be blind-sided.
